From the Savoyard dialect, "alpage" evokes the mountains and their meadows, the altitude and valleys, the grandeur of the summits. Jean-Rémi Caillon's heritage of peasant cooking inspires a sensitive tribute to winter and the majesty of the Alps.The chef naturally composes his palette of dishes according to the season, seduced by the fruits of the vegetable gardens of our valleys, fishing, hunting and the surrounding livestock.
As a chef-gatherer, the bouquets of the Courchevel mountain pastures are invited to the table and complete his basket of inspirations.
